Chiltepin Amarillo is a yellow-fruited form of the traditional wild chiletepin, one of the oldest known Capsicum annuum var. glabriusculum peppers native to the Americas. Like its red counterpart, it produces tiny, round berries about the size of a pea, but instead of ripening to deep red, they turn a bright golden yellow at full maturity. The plants are naturally bushy and can grow over a metre tall when established, often behaving more like perennial shrubs in warm climates.
The heat is sharp and immediate, characteristic of true chiltepins, typically landing in the high-hot range with a clean, piercing burn that quickly fades. The flavour is bright, slightly citrusy and almost wild-herbal, making the fruits excellent for crushing into salsas, infusions, hot oils, or drying for vibrant golden chilli flakes.
Because it is a wild-type pepper, Chiltepin Amarillo shows strong pest and disease resistance, and thrives in heat and full sun. It can be overwintered successfully with protection. As with all wild Capsicum, it may germinate more slowly than domesticated varieties, but the reward is a beautiful, productive plant with an authentic wild chilli character and a unique golden colour.
