Himo Togarashi is a traditional Japanese pepper producing distinctive, extremely thin and elongated fruits. Its name reflects the unusual appearance of the peppers, with himo meaning string or cord and togarashi referring to chilli pepper in Japanese.
The plants produce numerous slender pods that are commonly harvested while green, although they can be left on the plant to mature further. Himo Togarashi is valued primarily for its flavour rather than extreme heat and is excellent stir-fried, grilled or sautéed. The tender, narrow peppers work particularly well in Japanese and other East Asian dishes and can be cooked whole.
