Chile De Agua, also known as Chile de Agua Oaxaqueño, is a famous traditional Mexican pepper particularly associated with Oaxaca. The plants produce distinctive conical to elongated fruits that are commonly harvested green but mature through orange to red when allowed to fully ripen.
The relatively thick-walled peppers have an excellent fresh, complex flavour accompanied by a noticeable but manageable heat. In Oaxaca, Chile de Agua is traditionally roasted and used in salsas, stuffed dishes and other regional recipes. Its substantial flesh makes it particularly good for roasting and grilling.
